Histori

Ancient Egyptians used thyme for embalming. The ancient Greeks used it in their baths and burned it as incense in their temples, believing it was a source of courage. The spread of thyme throughout Europe is thought to be Roman, as they use it to purify their rooms and to "give aromatic flavors to cheese and drinks". In the Middle Ages of Europe, the potion was put under a pillow to help sleep and drive away a nightmare. In this period, women also often give gifts of knights and warriors including thyme leaves, as it is believed to bring courage to the bearer. Thyme is also used as an incense and placed in coffins during the funeral, as it should guarantee a journey to the next life.

The name of the fish genus Thymallus , was first given to grayling ( T. thymallus , described in 1758 edition Systema Naturae by Swedish zoologist Carl Linnaeus) , comes from the faint smell of thyme that comes from meat.

Culinary use

In some countries of the Levantine, and Asyur, the herbs za'atar (Arabic for thyme) contain thyme as an important ingredient. These are the common components of the bouquet garni , and herbes de Provence .

Thyme is sold fresh and dried. While summer seasonal greenhouse thyme is often available throughout the year. Fresh form is more flavourful, but also less comfortable; storage age is rarely more than a week. However, the fresh form can last for months if it is frozen carefully.

Fresh tyme is generally sold in stem bunches. The stalk is a single stem cut from the plant. It consists of a wooden stem with a pair of leaves or group of flowers ("leaf") spaced 1 / 2 up to 1 inch (13 to 25 mm) separate. Recipes can measure the thyme by a group (or fraction thereof), or with a sponge, or with a tablespoon or a teaspoon. Dry thyme is widely used in Armenia in tisanes (called urc ).

Depending on how it is used in a dish, the whole stalk can be used (for example, in a bouquet garni), or leaves removed and the trunks removed. Normally, when a recipe determines "bunch" or "stalk", it means the whole form; when determining the spoon, it means leaf. It's very acceptable for a dried substitute for the whole thyme.

Leaves can be removed from the stem by scratching the back of the blade, or by pulling the fingers or fork.

Thyme retains its taste in drying better than many other herbs.
